Arugula and Spinach Salad with Grapefruit Dressing

Ingredients

4 servings

Salad

  • 2 cups of arugula, coarsely chopped
  • 2 cups of spinach, coarsely chopped

Dressing

  • 6 mint leaves
  • 1 grapefruit
  • 1 tablespoon of chia seeds
  • 2 tablespoons maple syrup or honey
  • ½ cup of avocado oil
  • 3 tablespoons of tahini
  • 2 tablespoons of apple cider vinegar
  • 1 tablespoon of dill
  • 1 teaspoon of Himalayan salt
  • 3 tablespoons of water or more if needed

Preparation

  1. In a blender or food processor pulse the grapefruit, mint leaves and chia seeds until lightly minced. Gradually add the rest of the ingredients, add water if needed. The mix should be thick and creamy.
  2. Pour the dressing and gently toss the arugula and spinach salad.
