Asian Cucumber Salad
Ingredients
4 servings
- 3 medium-sized cucumbers
Dressing
- 2 cloves of garlic, minced
- 1 teaspoon of ginger root minced
- ½ teaspoon Himalayan salt
- ½ teaspoon of red pepper flakes
- 3 tablespoons of coconut aminos
- 3 tablespoons of sesame oil
- 2 teaspoons of sesame seeds
Preparation
- Slice cucumber VERY thinly. Set aside. I suggest using a vegetable peeler.
- In a small bowl, whisk garlic, ginger, coconut aminos, salt, red pepper flakes and sesame oil.
- Pour dressing over cucumbers, sprinkle with sesame seeds.
