Asian Cucumber Salad

Asian Cucumber Salad

Ingredients

4 servings

  • 3 medium-sized cucumbers

Dressing

  • 2 cloves of garlic, minced
  • 1 teaspoon of ginger root minced
  • ½ teaspoon Himalayan salt
  • ½ teaspoon of red pepper flakes
  • 3 tablespoons of coconut aminos
  • 3 tablespoons of sesame oil
  • 2 teaspoons of sesame seeds

Preparation

  1. Slice cucumber VERY thinly. Set aside. I suggest using a vegetable peeler.
  2. In a small bowl, whisk garlic, ginger, coconut aminos, salt, red pepper flakes and sesame oil.
  3. Pour dressing over cucumbers, sprinkle with sesame seeds.
