Asian Quinoa Salad

Ingredients

4 servings

Salad

  • ¼ cup quinoa
  • ½ teaspoon Himalayan salt
  • ½ cup cooked rice cauliflower stir fry (Trader Joe’s)
  • ¼ cup green peas
  • 1 cup cilantro, finely chopped
  • 3 to 4 tablespoons green onions, finely chopped

Dressing

  • 3 to 4 tablespoons sesame oil
  • 1 teaspoon ginger, minced
  • 3 to 4 tablespoons tamari
  • 1 tablespoon vinegar
  • ½ teaspoon garlic powder
  • Splash of water
  • Himalayan salt to taste

Preparation

  1. Rinse quinoa and soak in water for at least 4 hours.
  2. Bring 2 cups of water to a boil in a medium pot, add 1/4 teaspoon of salt. Add quinoa, reduce heat and cook for 16 minutes. Remove from heat and rinse with cold water, set aside.
  3. In a small bowl, mix sesame oil, tamari, vinegar, garlic, water and salt.
  4. In a medium bowl, combine quinoa, rice cauliflower, peas, cilantro and green onions. Pour dressing one tablespoons at a time.
  5. Enjoy!
