Asian Quinoa Salad
Ingredients
4 servings
Salad
- ¼ cup quinoa
- ½ teaspoon Himalayan salt
- ½ cup cooked rice cauliflower stir fry (Trader Joe’s)
- ¼ cup green peas
- 1 cup cilantro, finely chopped
- 3 to 4 tablespoons green onions, finely chopped
Dressing
- 3 to 4 tablespoons sesame oil
- 1 teaspoon ginger, minced
- 3 to 4 tablespoons tamari
- 1 tablespoon vinegar
- ½ teaspoon garlic powder
- Splash of water
- Himalayan salt to taste
Preparation
- Rinse quinoa and soak in water for at least 4 hours.
- Bring 2 cups of water to a boil in a medium pot, add 1/4 teaspoon of salt. Add quinoa, reduce heat and cook for 16 minutes. Remove from heat and rinse with cold water, set aside.
- In a small bowl, mix sesame oil, tamari, vinegar, garlic, water and salt.
- In a medium bowl, combine quinoa, rice cauliflower, peas, cilantro and green onions. Pour dressing one tablespoons at a time.
