Basil, Spinach, and Walnut Pesto
Ingredients
Makes 1 cup
- 4 ounces of fresh basil
- 2 cups of baby spinach
- 3 tablespoons water
- 1 tablespoon rice vinegar
- 2 cloves garlic
- 1½ teaspoons of Himalayan salt
- ½ cup olive oil
- 1 teaspoon mustard
- ¼ teaspoon turmeric
- ¾ cup walnuts
Preparation
- Add everything except walnuts in a blender or food processor. Pulse 5 times. Add walnuts and pulse 5 more times. The consistency should be crumbly, not runny.
- Store in refrigerator for up to 5 days.
