Berry Jam with Granola and Yogurt Parfait

Ingredients

4 to 6 servings

Berry jam

  • 2 cups berries (frozen or fresh)
  • ½ cup coconut sugar
  • 3 tablespoons chia seeds

Almond granola

  • 1 to 2 cups vanilla Greek yogurt

Preparation

For jam

  1. Chop the fruit into small chunks and place in a saucepan with coconut sugar. Cook on medium low heat until the fruit has broken down and is a soft compote.
  2. Remove from the heat and stir in the chia seeds.
  3. Allow to cool for a few minutes before transferring into a glass jar. Allow to cool completely and store in the fridge for 3-5 days.

To assemble parfait

  1. To assemble the parfaits, layer 1/3 cup yogurt into the bottom each tall glass. Alternate layers of granola with berries jam and yogurt until glasses are filled to the top. Serve parfaits immediately to keep granola crunchy. (Store leftover granola in an airtight container at room temperature for up to 1 week.)
