Carrot Mayonnaise

Ingredients

  • 4 carrots, largely diced
  • 2 tablespoons ginger
  • 2 tablespoons lemon juice
  • ½ cup olive oil
  • 1 teaspoon salt
  • 2 cloves garlic
  • 2 tablespoons of activated sunflower seeds
  • ½ teaspoon cumin
  • ½ teaspoon smoked paprika

Preparation

  1. Put all the ingredients in a powerful Vitamix-type blender, pulse repeatedly until a creamy and homogeneous texture is achieved.
