Carrot Potato Soup

Ingredients

6 servings

  • 2 tablespoons sesame oil
  • 6 carrots
  • 3 potatoes
  • 1 medium onion
  • 4 cups of water or broth
  • 2 tablespoons peeled and sliced ginger
  • Fresh parsley, finely chopped

Preparation

  1. Cut the carrots and potatoes into thick pieces.
  2. Heat the oil and brown the onion for a couple of minutes.
  3. Add the potatoes, ginger and carrot, and brown for a couple more minutes.
  4. Add the salt.
  5. Add the water, bring it to a boil and lower the heat, covering with the lid.
  6. Boil over medium heat for about 25 minutes or until carrots are cooked.
  7. Transfer to a blender or food processor and add more water if necessary to achieve the desired consistency.
