Carrot Potato Soup
Ingredients
6 servings
- 2 tablespoons sesame oil
- 6 carrots
- 3 potatoes
- 1 medium onion
- 4 cups of water or broth
- 2 tablespoons peeled and sliced ginger
- Fresh parsley, finely chopped
Preparation
- Cut the carrots and potatoes into thick pieces.
- Heat the oil and brown the onion for a couple of minutes.
- Add the potatoes, ginger and carrot, and brown for a couple more minutes.
- Add the salt.
- Add the water, bring it to a boil and lower the heat, covering with the lid.
- Boil over medium heat for about 25 minutes or until carrots are cooked.
- Transfer to a blender or food processor and add more water if necessary to achieve the desired consistency.
