Chickpea Salad
Ingredients

Salad
- 2 cups cooked garbanzo beans
- ½ cup fresh parsley, finely chopped
- 1 cup spinach, coarsely chopped
- ½ cup fresh mint leaves, finely chopped
- ½ cup sunflower seeds
- ⅓ cup hemp seeds
- 1 cup cherry tomatoes, cut in half
Dressing
- ¼ cup olive oil
- 2 tablespoons apple cider vinegar
- 2 cloves garlic, minced
- ½ teaspoon maple syrup
- Himalayan salt
Preparation
- In a small bowl, whisk olive oil, vinegar, garlic, maple syrup and salt.
- In a large bowl, combine garbanzo beans, parsley, mint, spinach, hemp and cherry tomatoes, pour the dressing over it.
- Serve at room temperature.
