Chickpea Salad

Ingredients

4 servings

Salad

  • 2 cups cooked garbanzo beans
  • ½ cup fresh parsley, finely chopped
  • 1 cup spinach, coarsely chopped
  • ½ cup fresh mint leaves, finely chopped
  • ½ cup sunflower seeds
  • ⅓ cup hemp seeds
  • 1 cup cherry tomatoes, cut in half

Dressing

  • ¼ cup olive oil
  • 2 tablespoons apple cider vinegar
  • 2 cloves garlic, minced
  • ½ teaspoon maple syrup
  • Himalayan salt

Preparation

  1. In a small bowl, whisk olive oil, vinegar, garlic, maple syrup and salt.
  2. In a large bowl, combine garbanzo beans, parsley, mint, spinach, hemp and cherry tomatoes, pour the dressing over it.
  3. Serve at room temperature.
