Chimichurri

Chimichurri

Ingredients

Makes 2 cups

  • 3 cups packed fresh parsley and cilantro, washed and dried
  • 1 shallot, finely chopped
  • 4 cloves of garlic, crushed
  • ¾ cup avocado oil
  • 1 tablespoon dry oregano
  • 4 tablespoons red wine vinegar
  • ¼ teaspoon red pepper flakes
  • 1 tablespoon sweet smoked paprika
  • ¼ teaspoon cumin
  • 1 teaspoon ground red chili
  • 1 teaspoon of Himalayan salt

Preparation

  1. In a medium bowl, whisk in avocado oil, oregano, red wine vinegar, red pepper flakes, smoked paprika, cumin, red chili and salt.
  2. Mix in shallots and garlic.
  3. Store in refrigerator for up to 2 days.
