Chimichurri
Ingredients
Makes 2 cups
- 3 cups packed fresh parsley and cilantro, washed and dried
- 1 shallot, finely chopped
- 4 cloves of garlic, crushed
- ¾ cup avocado oil
- 1 tablespoon dry oregano
- 4 tablespoons red wine vinegar
- ¼ teaspoon red pepper flakes
- 1 tablespoon sweet smoked paprika
- ¼ teaspoon cumin
- 1 teaspoon ground red chili
- 1 teaspoon of Himalayan salt
Preparation
- In a medium bowl, whisk in avocado oil, oregano, red wine vinegar, red pepper flakes, smoked paprika, cumin, red chili and salt.
- Mix in shallots and garlic.
- Store in refrigerator for up to 2 days.
