Chocolate Chip Oatmeal Cookies

Ingredients

10 to 12 servings

Wet ingredients

  • ¼ cup + 2 tablespoons melted coconut oil
  • 2 flax eggs (2 tablespoons ground flax + 6 tablespoons water, whisked together, set for fifteen minutes)

Dry ingredients

  • ¾ cup chocolate chips
  • 1 cup rolled oats
  • ¾ cup rice flour
  • 1 cup coconut sugar
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • Pinch Himalayan salt

Preparation

  1. Preheat oven to 350 °F. Line a baking sheet with parchment paper or grease well. Set aside.
  2. In a medium bowl, whisk together all wet ingredients: coconut oil, sugar, maple syrup and flax eggs. In a separate bowl, stir together the rolled oats, rice flour, sugar, baking powder, baking soda and salt.
  3. Add dry ingredients into wet ingredients, fold in chocolate chips. The dough will be sticky.
  4. Using a 1 tablespoon cookie scoop, scoop balls of cookie dough onto prepared baking sheet.
  5. Using a fork, flatten cookies into a round disc.
  6. Bake on the center oven rack for 12-14 minutes. Cookies will be too soft to lift, allow cookies to cool completely as they will be too soft to lift off the baking sheet when warm.
