Chocolate Mousse

Ingredients

3 to 4 servings

  • 1 cup chocolate chips
  • 1 tablespoon coconut oil
  • 2 ripe avocados
  • 2 tablespoons organic powdered sugar
  • ⅛ teaspoon Himalayan salt
  • ¼ teaspoon cinnamon (optional)
  • 2 to 3 tablespoons almond milk
  • 1 tablespoon cacao nibs, for garnish
  • Fresh mint, for garnish

Preparation

  1. In a saucepan add coconut oil and chocolate chips and slowly melt over low heat, stirring frequently and watching carefully so they don’t burn.
  2. Place the melted chocolate, avocado, sugar, salt and cinnamon in your blender or food processor, Pulse a few times. Add almond milk as needed.
  3. Use less milk for a thicker mousse and more for a thinner/creamier texture.
  4. Spoon into mini-jars and refrigerate for at least 2 hours (can be prepared 1 day in advance).
  5. Garnish with fresh mint and cacao nibs and serve.
