Chocolate Mousse
Ingredients
3 to 4 servings
- 1 cup chocolate chips
- 1 tablespoon coconut oil
- 2 ripe avocados
- 2 tablespoons organic powdered sugar
- ⅛ teaspoon Himalayan salt
- ¼ teaspoon cinnamon (optional)
- 2 to 3 tablespoons almond milk
- 1 tablespoon cacao nibs, for garnish
- Fresh mint, for garnish
Preparation
- In a saucepan add coconut oil and chocolate chips and slowly melt over low heat, stirring frequently and watching carefully so they don’t burn.
- Place the melted chocolate, avocado, sugar, salt and cinnamon in your blender or food processor, Pulse a few times. Add almond milk as needed.
- Use less milk for a thicker mousse and more for a thinner/creamier texture.
- Spoon into mini-jars and refrigerate for at least 2 hours (can be prepared 1 day in advance).
- Garnish with fresh mint and cacao nibs and serve.
