Cream of Asparagus and Sesame Seeds
Ingredients
4 servings
- 2 tablespoons ghee or coconut oil
- 20 stalks asparagus
- 3 medium potatoes, cut in halves
- 1 teaspoon salt
- 3 teaspoons sesame seeds
- 1 teaspoon garlic powder
- 1 teaspoon umami powder
- 1 teaspoon Za'atar powder
- 2 cups almond or coconut milk.
- 1 cup hot water
- Black pepper
Preparation
- In a saucepan, boil the potatoes for approximately 20 minutes.
- Remove from the heat and strain the water.
- Chop the asparagus into small pieces.
- In a frying pan, heat the ghee (or coconut oil) and add the garlic, umami and za'atar.
- Then add the chopped asparagus and sauté for 4 minutes.
- In the blender add the asparagus and potatoes.
- Add the milk little by little, pulsing the blender a couple of times until the desired texture is achieved.
- Add water if you want a lighter consistency.
- In a frying pan, toast the sesame, taking care not to burn it, for a couple of minutes.
- Add to the cream in an enveloping way.
- Black pepper to taste.
