Double Chocolate Brownies

Ingredients

10 to 12 servings

  • 1 can (15 ounces) organic black beans (rinsed and drained)
  • 2 to 3 tablespoons coconut milk
  • 1 cup chocolate chips
  • ¼ cup + 2 tablespoons coconut sugar
  • ¼ cup + 1 tablespoon cacao powder
  • ¼ cup avocado oil
  • Pinch Himalayan salt
  • 1 teaspoon baking powder

Preparation

  1. Preheat oven to 350 °F. Line an 8-inch pan with parchment paper or grease well. Set aside.
  2. Combine black beans and coconut milk in your blender or food processor. Pulse a few times.
  3. Add coconut sugar, cacao powder, avocado oil, salt and baking powder. Pulse 4-5 times, scraping down the sides as needed. You want it pretty smooth.
  4. Stir in the chocolate chips.
  5. Evenly distribute the batter into the prepared pan and smooth the tops with a spoon.
  6. Bake on the center oven rack for 30-35 minutes or until the tops are dry and the edges start to pull away from the sides of the pan.
  7. Remove from oven and let cool for an hour before removing from pan.
