Edamame and Cilantro Couscous Salad
Ingredients

Salad
- 1½ cups couscous
- 1½ cups boiling water
- ½ teaspoon Himalayan salt
- 1 tablespoon of olive oil
- 1½ cups cooked edamame
- ¾ cup corn
- 1 cup fresh cilantro, finely chopped
Dressing
- ½ cup olive oil
- ¼ cup apple cider vinegar
- 1 teaspoon mustard
- 1 teaspoon maple syrup
- ½ teaspoon Himalayan salt
- 2 tablespoons of water
Preparation
- Combine couscous, salt and oil with boiling water in a large heatproof bowl, cover and stand for about 8 minutes or until liquid is absorbed.
- Fluff with a fork.
- In a small bowl, whisk olive oil, vinegar, mustard, maple syrup and salt.
- In a large bowl, combine couscous with remaining salad ingredients, toss in dressing a few tablespoons at a time.
