Edamame and Cilantro Couscous Salad

Ingredients

6 servings

Salad

  • 1½ cups couscous
  • 1½ cups boiling water
  • ½ teaspoon Himalayan salt
  • 1 tablespoon of olive oil
  • 1½ cups cooked edamame
  • ¾ cup corn
  • 1 cup fresh cilantro, finely chopped

Dressing

  • ½ cup olive oil
  • ¼ cup apple cider vinegar
  • 1 teaspoon mustard
  • 1 teaspoon maple syrup
  • ½ teaspoon Himalayan salt
  • 2 tablespoons of water

Preparation

  1. Combine couscous, salt and oil with boiling water in a large heatproof bowl, cover and stand for about 8 minutes or until liquid is absorbed.
  2. Fluff with a fork.
  3. In a small bowl, whisk olive oil, vinegar, mustard, maple syrup and salt.
  4. In a large bowl, combine couscous with remaining salad ingredients, toss in dressing a few tablespoons at a time.
