Lentil Soup

Ingredients

6 servings

  • 2 tablespoons coconut or olive oil
  • 1 teaspoon thyme
  • 1 teaspoon of oregano powder
  • 1 onion, diced
  • 1 carrot, diced
  • 1 stalk of celery, thinly sliced
  • ½ cup of parsley
  • 2 cups raw lentils, soaked and drained
  • 1 bay leaf
  • 4 to 5 cups of water or vegetable broth
  • 1 teaspoon of sea salt
  • 1 lemon, juice
  • ½ cup dry white wine

Preparation

  1. Brown the onion in the oil over medium low heat.
  2. Add oregano and thyme, continue stirring for about 3 more minutes.
  3. Add carrot and celery.
  4. Season with sea salt.
  5. Add lentils, brown for a couple more minutes.
  6. Add the broth/water and the bay leaf.
  7. Bring to a boil. Cover the pot, lower the heat and cook for 40 to 50 minutes.
  8. Add the white wine, parsley, and lemon juice.
  9. Cook for 10-15 more minutes.
  10. Remove the bay leaf and enjoy.
