Lentil Soup
Ingredients
6 servings
- 2 tablespoons coconut or olive oil
- 1 teaspoon thyme
- 1 teaspoon of oregano powder
- 1 onion, diced
- 1 carrot, diced
- 1 stalk of celery, thinly sliced
- ½ cup of parsley
- 2 cups raw lentils, soaked and drained
- 1 bay leaf
- 4 to 5 cups of water or vegetable broth
- 1 teaspoon of sea salt
- 1 lemon, juice
- ½ cup dry white wine
Preparation
- Brown the onion in the oil over medium low heat.
- Add oregano and thyme, continue stirring for about 3 more minutes.
- Add carrot and celery.
- Season with sea salt.
- Add lentils, brown for a couple more minutes.
- Add the broth/water and the bay leaf.
- Bring to a boil. Cover the pot, lower the heat and cook for 40 to 50 minutes.
- Add the white wine, parsley, and lemon juice.
- Cook for 10-15 more minutes.
- Remove the bay leaf and enjoy.
