Marinara Sauce

Marinara Sauce

Ingredients

Makes 6 cups

  • ¼ cup olive oil
  • 6 cloves garlic
  • 2 pounds grape tomatoes
  • 1 generous handful of basil leaves
  • ¼ cup red wine
  • 1½ teaspoons Himalayan salt
  • 1 teaspoon sugar
  • ½ teaspoon red pepper flakes (optional)

Preparation

  1. In a large sauté pan, heat the olive oil over medium/high heat until hot. Add the garlic and continuously stir until light golden in color (do not let it brown), remove garlic from pan and discard.
  2. Add the tomatoes, salt and red pepper flakes, stir for a minute or two to coat evenly with oil.
  3. Reduce heat to medium low and add the basil and red wine, do not stir and let it simmer for 15 minutes.
  4. Lightly mash tomatoes and simmer over medium high for 10 more minutes.
  5. Remove and discard the basil and thoroughly mash tomatoes.
