Marinara Sauce
Ingredients
Makes 6 cups
- ¼ cup olive oil
- 6 cloves garlic
- 2 pounds grape tomatoes
- 1 generous handful of basil leaves
- ¼ cup red wine
- 1½ teaspoons Himalayan salt
- 1 teaspoon sugar
- ½ teaspoon red pepper flakes (optional)
Preparation
- In a large sauté pan, heat the olive oil over medium/high heat until hot. Add the garlic and continuously stir until light golden in color (do not let it brown), remove garlic from pan and discard.
- Add the tomatoes, salt and red pepper flakes, stir for a minute or two to coat evenly with oil.
- Reduce heat to medium low and add the basil and red wine, do not stir and let it simmer for 15 minutes.
- Lightly mash tomatoes and simmer over medium high for 10 more minutes.
- Remove and discard the basil and thoroughly mash tomatoes.
