Mushroom Risotto

Ingredients

6 servings

  • 1 tablespoon coconut oil
  • 1 onion, diced
  • ½ kilo of mushrooms thinly sliced
  • ½ teaspoon thyme or oregano powder
  • Sea salt
  • 1½ cups uncooked arborio rice
  • 1½ cups vegetable broth
  • 1½ cups dry white wine
  • ½ cup parsley, finely chopped
  • ½ cup basil, finely chopped
  • 2 lemons, juice

Preparation

  1. Add the onion and thyme.
  2. When they are golden brown, add the salt.
  3. Add the rice, brown for a couple more minutes.
  4. Lower the heat to medium low.
  5. Add the broth and white wine 1/2 cup at a time, stirring constantly.
  6. After approximately 14 minutes, add the mushrooms.
  7. Cover the pot.
  8. Add the parsley and basil for decoration when serving each plate.
  9. Drizzle lemon juice.
