Mushroom Risotto
Ingredients
6 servings
- 1 tablespoon coconut oil
- 1 onion, diced
- ½ kilo of mushrooms thinly sliced
- ½ teaspoon thyme or oregano powder
- Sea salt
- 1½ cups uncooked arborio rice
- 1½ cups vegetable broth
- 1½ cups dry white wine
- ½ cup parsley, finely chopped
- ½ cup basil, finely chopped
- 2 lemons, juice
Preparation
- Add the onion and thyme.
- When they are golden brown, add the salt.
- Add the rice, brown for a couple more minutes.
- Lower the heat to medium low.
- Add the broth and white wine 1/2 cup at a time, stirring constantly.
- After approximately 14 minutes, add the mushrooms.
- Cover the pot.
- Add the parsley and basil for decoration when serving each plate.
- Drizzle lemon juice.
