Pea and Mint Risotto

Ingredients

6 servings

  • 2 tablespoons olive oil
  • 1 white onion, minced
  • ½ teaspoon oregano
  • 1 teaspoon thyme
  • 1½ cups arborio rice
  • 1½ teaspoons salt
  • 2 cups white wine
  • 6 cups vegetable broth
  • ½ cup fresh mint, finely chopped
  • 2½ cups fresh green peas

Preparation

  1. Brown the onion in the hot oil, about 4 minutes.
  2. Add the salt, thyme and oregano.
  3. Add the rice and stir for 3 minutes.
  4. Lower to medium heat.
  5. Add the white wine and broth little by little, interspersing them, stirring constantly.
  6. Cook the rice, stirring constantly, about 30 minutes.
  7. Add the peas and cover the pot for 10 minutes.
  8. Turn off the heat and add the fresh mint.
  9. Serve immediately.
