Pea and Mint Risotto
Ingredients
6 servings
- 2 tablespoons olive oil
- 1 white onion, minced
- ½ teaspoon oregano
- 1 teaspoon thyme
- 1½ cups arborio rice
- 1½ teaspoons salt
- 2 cups white wine
- 6 cups vegetable broth
- ½ cup fresh mint, finely chopped
- 2½ cups fresh green peas
Preparation
- Brown the onion in the hot oil, about 4 minutes.
- Add the salt, thyme and oregano.
- Add the rice and stir for 3 minutes.
- Lower to medium heat.
- Add the white wine and broth little by little, interspersing them, stirring constantly.
- Cook the rice, stirring constantly, about 30 minutes.
- Add the peas and cover the pot for 10 minutes.
- Turn off the heat and add the fresh mint.
- Serve immediately.
