Quinoa Soup

Quinoa Soup

Ingredients

4 servings

  • 1 cup of quinoa, previously soaked for four hours
  • 2 cups of coarsely grated carrot
  • 1 cup broccoli, cut into small pieces
  • ½ cup of red pepper
  • 1 tablespoon grated ginger
  • ½ teaspoon cumin seeds
  • 4 cups of water
  • Parsley, finely chopped

Preparation

  1. Rinse the quinoa several times until the water runs clear.
  2. In a large pot, boil 4 cups of water and add the quinoa with the cumin seeds and ginger.
  3. After 10 minutes add the carrot, broccoli, and pepper, and cover the pot for about 6 more minutes until the vegetables are al dente.
  4. Turn off the pot and serve immediately in soup plates.
  5. Garnish with finely chopped parsley.
