Quinoa Soup
Ingredients
4 servings
- 1 cup of quinoa, previously soaked for four hours
- 2 cups of coarsely grated carrot
- 1 cup broccoli, cut into small pieces
- ½ cup of red pepper
- 1 tablespoon grated ginger
- ½ teaspoon cumin seeds
- 4 cups of water
- Parsley, finely chopped
Preparation
- Rinse the quinoa several times until the water runs clear.
- In a large pot, boil 4 cups of water and add the quinoa with the cumin seeds and ginger.
- After 10 minutes add the carrot, broccoli, and pepper, and cover the pot for about 6 more minutes until the vegetables are al dente.
- Turn off the pot and serve immediately in soup plates.
- Garnish with finely chopped parsley.
