Roasted Brussels Sprouts with Almond Sauce

Ingredients

6 servings

  • 1 pound Brussels sprouts, washed and dried
  • ¼ cup olive oil
  • 1 teaspoon parsley
  • ¼ teaspoon turmeric

Dressing

  • 1 clove garlic
  • 1 tablespoon maple syrup
  • ½ cup almond butter
  • 5 tablespoons apple cider vinegar
  • 1 tablespoon lemon juice
  • 5 tablespoons olive oil
  • ½ teaspoon red pepper flakes
  • 1 tablespoon water
  • 1 teaspoon Himalayan salt

Preparation

  1. Preheat the oven to 400 degrees. Cover a baking sheet with parchment paper.
  2. Arrange the sprouts in a single layer on the baking sheet and lightly coat with a mixture of olive oil, parsley, and turmeric.
  3. Place it in the oven for 15 minutes, flip the Brussels sprouts, coat with the mixture again and finish it in the oven for 20 minutes.
  4. In a blender or food processor, add all the dressing ingredients and blend until smooth.
  5. Pour the dressing over the Brussels sprouts. Serve hot.
