Roasted Brussels Sprouts with Almond Sauce
Ingredients
6 servings
- 1 pound Brussels sprouts, washed and dried
- ¼ cup olive oil
- 1 teaspoon parsley
- ¼ teaspoon turmeric
Dressing
- 1 clove garlic
- 1 tablespoon maple syrup
- ½ cup almond butter
- 5 tablespoons apple cider vinegar
- 1 tablespoon lemon juice
- 5 tablespoons olive oil
- ½ teaspoon red pepper flakes
- 1 tablespoon water
- 1 teaspoon Himalayan salt
Preparation
- Preheat the oven to 400 degrees. Cover a baking sheet with parchment paper.
- Arrange the sprouts in a single layer on the baking sheet and lightly coat with a mixture of olive oil, parsley, and turmeric.
- Place it in the oven for 15 minutes, flip the Brussels sprouts, coat with the mixture again and finish it in the oven for 20 minutes.
- In a blender or food processor, add all the dressing ingredients and blend until smooth.
- Pour the dressing over the Brussels sprouts. Serve hot.
