Roasted Carrots with Dukkah

Ingredients

6 servings

  • 6 to 8 long and thin carrots washed and dried
  • 1 tablespoon of avocado oil
  • 3 to 4 tablespoons Dukkah (almonds, sesame seeds, fennel seeds)
  • 1 teaspoon sea salt flakes

Preparation

  1. Preheat the oven to 400 degrees. Line a baking pan with parchment paper. Place carrots in a single layer on the baking pan and brush lightly with avocado oil.
  2. Place in the oven and bake for 20 minutes or until carrots are tender yet still having a firm texture.
  3. Place carrots in a big platter, sprinke Dukkah over carrots.
  4. Sprinkle sea salt over carrots
  5. Serve warm.
