Roasted Carrots with Dukkah
Ingredients
6 servings
- 6 to 8 long and thin carrots washed and dried
- 1 tablespoon of avocado oil
- 3 to 4 tablespoons Dukkah (almonds, sesame seeds, fennel seeds)
- 1 teaspoon sea salt flakes
Preparation
- Preheat the oven to 400 degrees. Line a baking pan with parchment paper. Place carrots in a single layer on the baking pan and brush lightly with avocado oil.
- Place in the oven and bake for 20 minutes or until carrots are tender yet still having a firm texture.
- Place carrots in a big platter, sprinke Dukkah over carrots.
- Sprinkle sea salt over carrots
- Serve warm.
