Roasted Cauliflower with Peanut Sauce
Ingredients

- 1 pound cauliflower wash and dried
- ¼ cup olive oil
- 1 teaspoon everything bagel seasoning
- ¼ teaspoon turmeric
Dressing
- 1 lemongrass stalk
- 1 clove garlic
- 1 tablespoon maple syrup
- ½ cup peanuts
- 5 tablespoons apple cider vinegar
- 1 tablespoon lime juice
- 5 tablespoons olive oil
- ½ teaspoon red pepper flakes
- 1 tablespoon water
- 1 teaspoon Himalayan salt
Preparation
- Preheat the oven to 400 degrees. Line a baking pan with parchment paper.
- Remove the outer green leaves from the head of cauliflower and trim the stem.
- Using a large knife cut the cauliflower in half lengthwise through the center.
- Cut 1 1/2-inch thick steaks from the cauliflower.
- Place cauliflower in a single layer on the baking pan and coat lightly with a mix of olive oil, everything bagel seasoning and turmeric.
- Place in the oven and bake for 15 minutes, turn over the cauliflower, season and bake for 20 minutes more.
- In a blender or food processor, add all dressing ingredients and blend until smooth.
- Spoon dressing over cauliflower. Serve warm.
