Roasted Cauliflower with Peanut Sauce

Ingredients

4 servings

  • 1 pound cauliflower wash and dried
  • ¼ cup olive oil
  • 1 teaspoon everything bagel seasoning
  • ¼ teaspoon turmeric

Dressing

  • 1 lemongrass stalk
  • 1 clove garlic
  • 1 tablespoon maple syrup
  • ½ cup peanuts
  • 5 tablespoons apple cider vinegar
  • 1 tablespoon lime juice
  • 5 tablespoons olive oil
  • ½ teaspoon red pepper flakes
  • 1 tablespoon water
  • 1 teaspoon Himalayan salt

Preparation

  1. Preheat the oven to 400 degrees. Line a baking pan with parchment paper.
  2. Remove the outer green leaves from the head of cauliflower and trim the stem.
  3. Using a large knife cut the cauliflower in half lengthwise through the center.
  4. Cut 1 1/2-inch thick steaks from the cauliflower.
  5. Place cauliflower in a single layer on the baking pan and coat lightly with a mix of olive oil, everything bagel seasoning and turmeric.
  6. Place in the oven and bake for 15 minutes, turn over the cauliflower, season and bake for 20 minutes more.
  7. In a blender or food processor, add all dressing ingredients and blend until smooth.
  8. Spoon dressing over cauliflower. Serve warm.
