Shaved Zucchini/Squash Salad

Ingredients

4 servings

Salad

  • 2 zucchinis (finely sliced with a vegetable peeler) or
  • 1 yellow squash (finely sliced with a vegetable peeler)
  • 6 tablespoons shaved almonds

Dressing

  • ¼ cup of avocado oil
  • 1 teaspoon maple syrup or honey
  • ½ teaspoon Himalayan salt
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lime juice
  • 3 teaspoons tamari sauce
  • Splash of water
  • Sea salt flakes to taste
  • Freshly ground pepper

Preparation

  1. To make the dressing, add to a small jar, avocado oil, maple syrup or honey, salt, Dijon mustard, lime juice, Tamari sauce, seal with the lid and shake to combine.
  2. Add zucchini and/or squash to a large bowl.
  3. Give the jar of dressing a good shake, pour in the salad and toss gently.
  4. Transfer to a serving bowl, top with shaved almonds, sea salt flakes and freshly ground pepper.
