Shaved Zucchini/Squash Salad
Ingredients

Salad
- 2 zucchinis (finely sliced with a vegetable peeler) or
- 1 yellow squash (finely sliced with a vegetable peeler)
- 6 tablespoons shaved almonds
Dressing
- ¼ cup of avocado oil
- 1 teaspoon maple syrup or honey
- ½ teaspoon Himalayan salt
- 1 tablespoon Dijon mustard
- 1 tablespoon lime juice
- 3 teaspoons tamari sauce
- Splash of water
- Sea salt flakes to taste
- Freshly ground pepper
Preparation
- To make the dressing, add to a small jar, avocado oil, maple syrup or honey, salt, Dijon mustard, lime juice, Tamari sauce, seal with the lid and shake to combine.
- Add zucchini and/or squash to a large bowl.
- Give the jar of dressing a good shake, pour in the salad and toss gently.
- Transfer to a serving bowl, top with shaved almonds, sea salt flakes and freshly ground pepper.
