Spinach and Parsley Couscous Salad

Ingredients

6 servings

Salad

  • 1 cup couscous
  • 1 cup boiling water
  • ½ teaspoon Himalayan salt
  • 1 tablespoon of olive oil
  • ¼ cup pumpkin seeds
  • 1 cup tomatoes diced
  • 2 cups spinach coarsley chopped
  • 1 cup fresh flat leaf parsley, finely chopped

Dressing

  • ½ cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon mustard
  • ½ teaspoon Himalayan salt

Preparation

  1. Combine couscous and salt with boiling water in a large heatproof bowl, cover and stand for about 8 minutes or until liquid is absorbed.
  2. In a small bowl, whisk olive oil, vinegar, mustard and salt
  3. In a large bowl, combine couscous with remaining salad ingredients, toss in dressing a few tablespoons at a time.
