Spinach and Parsley Couscous Salad
Ingredients

Salad
- 1 cup couscous
- 1 cup boiling water
- ½ teaspoon Himalayan salt
- 1 tablespoon of olive oil
- ¼ cup pumpkin seeds
- 1 cup tomatoes diced
- 2 cups spinach coarsley chopped
- 1 cup fresh flat leaf parsley, finely chopped
Dressing
- ½ cup olive oil
- 2 tablespoons apple cider vinegar
- 1 teaspoon mustard
- ½ teaspoon Himalayan salt
Preparation
- Combine couscous and salt with boiling water in a large heatproof bowl, cover and stand for about 8 minutes or until liquid is absorbed.
- In a small bowl, whisk olive oil, vinegar, mustard and salt
- In a large bowl, combine couscous with remaining salad ingredients, toss in dressing a few tablespoons at a time.
