Sun-Dried Tomato Bruschetta
Ingredients
4 to 6 servings
- 2 cups tomatoes (chopped)
- ½ cup semi sun-dried tomatoes (finely chopped)
- ½ cup fresh basil (coarsely chopped)
- ¼ cup olive oil
- 2 cloves garlic (minced)
- 2 tablespoons sherry vinegar or balsamic vinegar
- ¼ teaspoon Himalayan salt
- ¼ teaspoon freshly ground black pepper
- 1 baguette
Preparation
- Preheat the oven on broiler setting.
- In a large bowl, combine the tomatoes, sun-dried tomatoes, basil, olive oil, garlic, sherry vinegar, salt and pepper. Allow the mixture to sit for 20 minutes.
- Cut the baguette into 3/4 – inch slices. On a baking sheet, arrange the baguette slices in a single layer. Broil on high for 1 to 2 minutes, until slightly brown.
- Divide the tomato mixture evenly over the baguette slices. Top with more basil and freshly ground black pepper.
