Sun-Dried Tomato Bruschetta

Ingredients

4 to 6 servings

  • 2 cups tomatoes (chopped)
  • ½ cup semi sun-dried tomatoes (finely chopped)
  • ½ cup fresh basil (coarsely chopped)
  • ¼ cup olive oil
  • 2 cloves garlic (minced)
  • 2 tablespoons sherry vinegar or balsamic vinegar
  • ¼ teaspoon Himalayan salt
  • ¼ teaspoon freshly ground black pepper
  • 1 baguette

Preparation

  1. Preheat the oven on broiler setting.
  2. In a large bowl, combine the tomatoes, sun-dried tomatoes, basil, olive oil, garlic, sherry vinegar, salt and pepper. Allow the mixture to sit for 20 minutes.
  3. Cut the baguette into 3/4 – inch slices. On a baking sheet, arrange the baguette slices in a single layer. Broil on high for 1 to 2 minutes, until slightly brown.
  4. Divide the tomato mixture evenly over the baguette slices. Top with more basil and freshly ground black pepper.
