Vegan Caesar Salad

Ingredients

4 servings

Salad

  • 2 heads of butter lettuce
  • 1 cup of croutons
  • ¼ cup of coconut milk
  • 1 tablespoon of chia seeds
  • 2 tablespoons of hemp seeds
  • 2 tablespoons of tahini

Dressing

  • 2 cloves of garlic, crushed
  • 1 tablespoon mustard
  • 2 tablespoons of rice vinegar
  • 2 teaspoons of vegan Worcestershire sauce
  • 3 tablespoons of olive oil
  • 1 or 2 tablespoons of water
  • 1 teaspoon Himalayan salt
  • Black pepper

Preparation

  1. In a small bowl, combine milk, chia and hemp seeds set aside for 10 minutes.
  2. In a small bowl, whisk garlic, mustard, vinegar, Worcestershire sauce, olive oil, water and salt
  3. In a large bowl, pour the mix of milk, chia, and hemp over lettuce, toss gently to combine. Divide among serving plates; pour Caesar dressing on each plate, sprinkle freshly ground black pepper.
