Vegan Caesar Salad
Ingredients

Salad
- 2 heads of butter lettuce
- 1 cup of croutons
- ¼ cup of coconut milk
- 1 tablespoon of chia seeds
- 2 tablespoons of hemp seeds
- 2 tablespoons of tahini
Dressing
- 2 cloves of garlic, crushed
- 1 tablespoon mustard
- 2 tablespoons of rice vinegar
- 2 teaspoons of vegan Worcestershire sauce
- 3 tablespoons of olive oil
- 1 or 2 tablespoons of water
- 1 teaspoon Himalayan salt
- Black pepper
Preparation
- In a small bowl, combine milk, chia and hemp seeds set aside for 10 minutes.
- In a small bowl, whisk garlic, mustard, vinegar, Worcestershire sauce, olive oil, water and salt
- In a large bowl, pour the mix of milk, chia, and hemp over lettuce, toss gently to combine. Divide among serving plates; pour Caesar dressing on each plate, sprinkle freshly ground black pepper.
